Vegetable Pulav (South Indian Style)

VEGETABLE PULAV 

This is an easy one pot meal, ideal for lunch box or as a main course dish for a family gathering. This is a South Indian style pulav with coconut milk added to enhance the flavor. It can served as it is or with a raita. it is very nutritious and healthy as different vegetables are added in it. 



 SERVES - 5 persons

Lets begin with the recipe. 

INGREDIENTS:

For Masala Paste:

Ginger - 2 inch piece

Garlic - 1 

Mint leaves (pudina) - handful

Coriander leaves - handful

Green chilli - 2

Onion - 1

 


For Coconut milk:

Coconut pieces cut – 1 cup

 

 

For Pulav:

Cooking oil – 2 tablespoon

Cumin seeds (jeera) – 1 teaspoon

Fennel seeds (saunf) – 1 teaspoon

Cardamom (elaichi) – 3

Cinnamon (dalchini/ chakke) – 2 pieces

Clove (lavang) – 6

Bay leaf – 1

Black cardamom – 1

Marathi moggu – 1

Star anise (Chakra phool) – 1

Carrot – 1

Beans – ¾th cup

Green peas – ½ cup

Potato – 3 small

Tomato – 2 medium sized

Onion – 2 medium size sliced

Rice – 2 cups

Water – 3 ½ cups

Ghee – 1 table spoon

Salt – as per taste


 

PREPARATION METHOD:

1.  Firstly in a blender add all the ingredients for masala paste and blend it into a smooth paste by adding only little water.

 

2.  Next blend the coconut pieces with little water and strain the coconut milk using a strainer.

 


 3. In a cooker, heat 2 table spoons oil, add jeera along with other whole garam masala and sauté for a minute. Do not burn them.

 

 

4. Further add the sliced onion and sauté till the onions are slightly transparent.

 

5. Now add the masala paste and sauté for 3 to 4 mins.

 

6. Add in the vegetables with little salt and mix thoroughly.

 

7. Now add the coconut milk and allow it to boil for a couple of minutes on a low flame.

 

8. Add in the tomatoes and give it a mix.

 

9. Add in the rice, 3 ½ cups water and mix well.

 

10. Check the taste of the water. Add salt if required. Close the cooker lid and wait for 2 whistles on a high flame.

 

11. Let the cooker cool down. Open the lid and add the ghee. Leave it for 10 minutes and then gently mix. Your delicious vegetable pulav is ready to be served with cucumber raita.

 

 

NOTE:

·        Instead of adding coconut milk, freshly grated coconut can be directly blend with the masala ingredients.

·        I have added only 2 green chillies; you can adjust the quantity according to your taste.

·        Vegetables like cauliflower, corn and capsicum can also be added.
