A rice dish which is basically prepared using mint leaves (pudina) and other spices. I know many of them know how to prepare MINT PULAV (PUDINA RICE).

Ingredients:
Basumati rice (thin long grained rice) – 3 ½ cups (normal tea cup), Mint leaves (Pudina) – 1 cup, Tomato (optional) – 1 medium size, Onions(optional) – 2 medium sized, Potato (optional) – 3 peeled, Cinnamon (ಚಕ್ಕೆ ) – 2 inch piece, Cloves (ಲವಂಗ ) – 3 to 4, Cardamom (elaichi/ಏಲಕ್ಕಿ ) – 2, Green chillies – 2, Garlic – 8 flakes, Ginger – 1 inch piece, Garam masala powder – 1 spoon, Red chilli powder – 1 spoon, Ghee – 3 spoon, Salt as per taste

Preparation Method:
  1. Wash the rice twice with water and soak the rice in fresh water for about 20 mins and drain the water completely. 
  2. Cut the onions and tomatoes into long strings, Peel and dice the potato. 
  3. Wash the mint leaves properly and grind it with green chillies, garlic and ginger into a very fine paste. 
  4. Heat the ghee in cooker and gently saute the cinnamon, cloves and cardamom. 
  5. Add onions and fry them for few seconds. 
  6. Add potatoes and sprinkle little water. Close a plate on cooker and cook on a low flame for 5 mins. 
  7. Add tomato, mint paste, spice powders and mix gently. 
  8. Add water (for 1 cup of basumati rice add 1¾ cup of water), salt and bring to boil. 
  9. Finally add rice and mix properly. Close the lid of the cooker with the whistle. 
  10. Allow it to cook for 3 whistle of cooker and remove from the flame. 
  11. Serve it with raita.
 

Serves: 4 to 5 persons.
