PESARATTU

Pesarattu is a traditional breakfast of Andhra. It is a type of dosa that is preapared using GREEN GRAM (Moong dal). It is very easy to prepare. I learned this recipe from a magazine. Pesarattu is usually served with ginger chutney. I combined it with tomato chutney and it tastes good.



Ingredients for Tomato chutney:
Tomatoes - 3, Onions - 2, Garlic flakes - 12 to 15, Black gram dal ( ಉದ್ದಿನ ಬೇಳೆ ) - 2 spoons, Dry red chillies (ಬ್ಯಾಡಗಿ ಮೆಣಸು) - 6 to 8, Grated Coconut - 4 spoons, Salt as per taste, Oil - 2 spoons, Mustard seeds - 1 spoon.

Preparation Method:
  1. Heat oil in a pan and fry black gram dal til golden brown then fry the red chillies.
  2. Add garlic and fry.
  3. Now add onions and fry little. Add tomatoes and cook them till they are soft.
  4. Finally add coconut and fry.
  5. Grind all the ingredients and add salt.
  6. Seasoning is done by oil mustard seeds spluttered in oil.

Ingredients for Pesarattu:
Green gram dal - 4 cups, Dosa rice - 2 cups, Green chillies - 3, Ginger - 2 inch finelly chopped, Corinder chopped - 1/2 cup, Salt as per taste.

Preparation Method:
  1. Soak the green gram and rice in water overnight.
  2. Next day morning grind the green gram and rice with all the other ingredients and water to make batter of any other dosa batter consistency. (not watery).
  3. Heat the tava and grease it with half a spoon oil.
  4. Pour one laddle full of the batter on the centre of the tava and spread it outwards from centre to a round shaped dosa. Put little oil on the sides of the dosa while cooking
  5. Close with a lid and cook the dosas on both sides.
  6. Serve the hot dosas with the tomato chutney.

Serves: Serves 6 to 7 persons.
